Sodium Benzoate

Properties:
The most important of the sodium benzoate properties is that it kills bacteria, yeast or fungi growth. It works the best for foods that have pH balance less than 3.6. It is E211 and its chemical formula is NaC₆H₅CO₂. Also, the concentration of sodium benzoate as a food preservative is limited to 0.1% by weight. Sodium benzoate is soluble in water and its melting point is 300 degrees. The taste of sodium benzoate is salty and it the food bitter, if added in larger quantities.

Uses:
Sodium benzoate is popularly used as food preservative in a number of acidic food products like salad dressings, cold drinks, jams, fruit juices and others. But apart from that it also has other important uses like:

• Sodium benzoate is one of the ingredients in alcohol based mouthwashes.
• It is used for preparing silver polish.
• It is used in firework to produce the whistling sound created at the time of ignition.
• Sodium benzoate is an ingredient in animal food, but only upto 0.1 per cent as, cats have lower tolerance against benzoic acid.
• It is used to prevent fermentation in wines.

Potassium sorbate is the potassium salt of sorbic acid,
Chemical formula CH3CH=CH-CH=CH-CO2K.
It is very soluble in water (58.2% at 20 °C).
It is primarily used as a food preservative (E number 202).
Potassium sorbate is effective in a variety of applications including food, , and personal care products.

Uses: Potassium sorbate is used to inhibit molds and yeasts in many foods, such as cheese, , yogurt, dried meats, apple cider, soft drinks and fruit drinks, and baked goods.
It is used in the preparation of items such as Sweet maple syrup and milkshakes served by fast food conglomerates.

Use:
Fumaric acid has bacteriostatic and antiseptic function, it can be used as acidulant, acidity regulator, acidifier, thermal-oxidative resist auxiliary, curing accelerant and spice. It can replace malic acid, citric acid, for its acidity degree is 1.5 times of that of citric acid.
